Pithivier

I have made a puff pastry in which represents the sun called a "pithivier". This beautiful and very round creation is made with two layers of puff pastry dough a layer of your choice of apricot or orange marmalade, and a dome of almond cream. This was a delicious and most interesting of a pairing for a puff pastry I have ever heard. This pastry is better warm with a side of vanilla ice cream.  I ran into a couple of problems when forming this puff pastry. My first problem is how I didn't make a tall enough dome of almond paste inside my pithivier. My second problem was that since i didn't close the two layers of the pithivier seams, all the  filling poured out of the pastry baking and left it flat rather than leaving a nice sealed dome for the final creation. My third problem was that I added a huge amount of egg wash that wasn't necessary for the golden brown that I wanted. From these mistakes I have learned to create a much better pithivier for the next time.
